This is a new look at Pinot Noir through a white wine lens. Central Otago Pinot Noir grapes were hand-picked and quickly pressed then fermented as white juice. The result is a fresh and energetic white wine perfect for summer and something a little different. The nose displays red apple, honeysuckle, and strawberry. The palate is sweetly fruited, fresh and lively, with notes of red apple, melon and a touch of spice. Best to serve chilled.

Rabbit Ranch Chardonnay is made to express the very best of Central Otago's cool climate, unique schist soils and grand vistas. Handpicking, whole bunch pressing, minimal intervention and oak result in an expressive, energetic wine displaying the typical white floral and ripe citrus notes that are a hallmark of the region's best Chardonnay.

Rabbit Ranch Pinot Gris, being a mutation of Pinot Noir, revels in the Central Otago conditions that suit Pinot Noir so beautifully - a long slow ripening period is desirable, with cool nights and warm days as the Autumn harvest approaches. The Rabbit Ranch Pinot Gris has a mineral acidity backbone and an off dry finish that gives the wine a delicious structure and refreshing style.

Sheep and rabbits co-existed on the land for quite some time but the sheep couldn't keep up with the nocturnal activity of the rabbits, and in the end were driven off the land. Rabbits now run free on the vineyard and fuelled by high altitude Pinot Noir, some are reputed to be the size of ponies, but that's another story... With the fine balance of ripe fruit, natural acidity and mineral tension this wine truly represents the Pisa sub-region and its complex nature.
